Blueberry and Banana Bread with Homemade Butter

Simple yet delicious Banana and Blueberry Bread with Homemade Butter (less saturated fat and no salt). This is a great little treat that will fill your house full of lovely smells!

Ingredients

  • 600ml double cream
  • 110g of homemade butter
  • 85ml homemade buttermilk
  • 285g plain flour
  • 225g caster sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp bicarbonate of soda
  • 1/2 tsp of salt
  • 1 handful of blueberries and 3 ripe bananas

Whisk the double cream on high until over-whipped and the curds separate from the whey. Sieve the mixture into a bowl removing all the liquid (this is lovely homemade buttermilk which is also going in the mix), and you are left with fresh homemade butter! Weigh 110g of the butter for the mixture and put the rest in a nice butter dish for serving.

Then pre-heat your oven to 180C and mash your bananas and put to the side.  Cream your butter with the sugar until light and fluffy. Beat the eggs and the buttermilk into the sugar mixture, add the bananas, blueberries and vanilla extract and then stir.

Sieve the flour into the same mix, add the salt and bicarb and then stir again.
Pour into a greased 2 kilo bread tin and pop in the oven for 45 mins or until golden and well risen.

Whilst we can’t go as far as calling this a healthy snack, it still earns a nutrition star for its fruit and protein content – and being homemade, there are no nasty surprises hidden in it.

Children need calories (the average 2 year old requires around 1200 kcal every day) so a home-baked cake like this serves as a good pudding option.

If you want to make it healthier leave out the butter, use wholemeal flour instead of plain flour, replace the white sugar with a dark brown sugar and add a few more blueberries. For older kids/adults you could also sprinkle some raw seeds on top before baking.
